New Zealand’s first permanent Light House - Pencarrow is set on one of the harshest areas on the New Zealand coast and has had many brave and hardy keepers over its lifetime. None more extraordinary than Mrs Mary Jane Bennett, who in 1855 took over the post of Lighthouse Keeper following the death of her husband - Lighthouse Keeper George Bennett. He left her with five children and a baby on the way. For us she is a true character of excellence and one to be celebrated! She looked after the light house for ten years. The thing we love most about this story is that is tells the story of a strong woman connected to Pencarrow and enables the Palliser/Pencarrow brand to reveal the more feminine aspect of its nature/brand - which until now has remained hidden.

Vinification
The fruit is settled over 2 days, racked to tank and fermented leaving 2.6 grams per litre of residual sugar. This gives the wine added weight and texture. Picking Date: March 2023 Alcohol: 12.5% Bottled: August 2023 pH: 3.16 TA: 8.1 Residual Sugar: 2.6 g/L
Maturation
The wine then spends a further 3 months on lees before bottling.
