Product Range: Estate
The Estate range of wines are our flagship tier and they include a Pinot noir, Chardonnay, Sauvignon blanc, Pinot gris, Riesling and Methodé Traditionnelle (Pinot noir and Chardonnay blend). In 2014 we also released our first Rosé under this Range. Limited amounts are made under this label each year.

Palliser (certified organic) and Pencarrow (in conversion) Vineyard fruit.

Viticulture
67% of the fruit from our Palliser Vineyard and the balance from our Pencarrow Vineyard.
Vinification
The fruit is harvested and gently crushed to tank, cold settled over two days and racked to tank and fermented leaving 3.3g/litre of residual sugar giving added weight and texture to the wine
Maturation
A 10% portion is fermented in old barrels. The wine then spends a further two months on lees before bottling
