Description

Aromas of bramble, dark cherries, violets, and dried lavender on the nose. A bright palate of primary fruit characters intertwined with spice, herbal, and savoury undertones. Sinewy tannins frame the palate leading to a lengthy finish.

Vineyard

Purchased as an established organic vineyard in late 2020, Brookby Springs is so named for its location in Brookby Road in the Southern Valleys sub-region and the natural freshwater that springs from adjacent hillsides. The 18-hectares have a soil profile that is silt loam overlying clay, an ideal profile for providing texture and body to the wines it produces.

Viticulture

Our aim in the vineyard is to grow the best fruit we can so it can speak of its home and express its personality. To do this you need healthy vines and soil. By practicing organics and incorporating some biodynamic principles we believe we are doing our best to help achieve this and let our vineyards evolve and speak as they would like.

Vinification

A selection of clones 777, 115, 667, and Abel were hand-picked on the 27th of March. The grapes were destemmed with 15% left as whole clusters. After a two-day cold soak, a native fermentation began which lasted 7-10 days, with 3 to 4 weeks total on skins. The wine was gently pressed to selected French Oak barriques and puncheons, with 25% being new. Natural spring malolactic fermentation occurred with an élevage of 16 months before being racked and prepared for bottling in November 2022.
